Those days when you really fancy something good but your cupboards are empty, so you have to take matters in your own hands! Great for sandwiches, snacking or as addition to soups. Buckwheat soda bread and red kidney beans pate! Lovely! Here are your recipes. Easy and straight forward! You are going to love it!
BUCKWHEAT SODA BREAD
INGREDIENTS:
450gr of Buckwheat flour (I’m normally doing this recipe on wholemeal flour so try this as well!!!! definitely worth it)
1 teasp Baking Soda
1/2 teasp salt
25g brown sugar
50ml of olive oil
1 pt buttermilk
METHOD
1. Preheat the oven to 400F/200C/Gas6
2. Tip the flour, salt, sugar and bicarbonate of soda into a large mixing bowl and stir
3. Pour buttermilk and mix quickly
4. Turn onto a lightly floured surface and knead briefly
5. Place into 11Ib loaf tin
6. Bake for about 30 min
RED KIDNEY BEANS PATE
INGREDIENTS:
240g of red kidney beans
8 sun-dried tomatos
1 red onion
3 table spoons of olive oil
parsley
sweet paprika
salt
METHOD
1. Chop well red onion and fried with salt and sweet paprika
2. Add beans, sun-dried tomatoes and parsley
3. Blend it and add more paprika if needed (coriander suits here perfectly, but no one apart of me likes it in the house. So, that is the reason that I haven’t added it in the first place)
